Tarragon Chicken Salad
Ingredients
- Breast meat from 1 rotisserie chicken
- 1/2 lemon, juice and zest
- 1/4 cup mayonnaise
- 1 Tbsp Dijon mustard
- 1 Tbsp chopped Tarragon, plus 1 sprig reserved for presentation
- 2 celery stalks, finely or roughly chopped based on your preference
- Handful of Toy Box tomatoes, halved
- Salt and pepper to taste
Directions
- Remove breast meat from chicken and place in serving bowl
- In the bowl, add tarragon, lemon juice, mayonnaise, mustard, salt and pepper
- Mix with your hands to break up the chicken and combine all the flavors
- Refrigerate until chilled
- Finish with halved tomatoes, lemon zest and a sprig of tarragon
- Serve with veggies and pita
