4th of July Banana Bread
Ingredients
- 1 2/3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup and 2 Tbsp cane sugar, plus 3 Tbsp for sugar crust
- 2 room temperature eggs, cracked
- 1/2 cup vegetable oil
- 4 bananas, very ripe and mashed Tip: Place unripened bananas on parchment covered baking sheet and cook at 350 Degrees F until black
- 2 tablespoons sour cream
- 1 teaspoon vanilla extract
- Red and Blue food coloring
- 2/3 cup walnuts, toasted and chopped
Directions
- Preheat oven to 350 degrees F.
- Grease a non-stick loaf pan well or line the bottom with parchment paper
- Sift together the flour, baking soda, cinnamon and salt.
- Using a stand or hand mixer beat sugar and eggs until light and fluffy, approx. 10 minutes.
- Drizzle in oil.
- Add mashed bananas, sour cream, and vanilla.
- Fold in dry ingredients and nuts.
- Divide the batter among three bowls. Add the red and blue to two of the bowl and leave the last one plain. Fold the food coloring just until combined.
- Add dollops of the batter to the prepared pan, alternating between red, white & blue intermittently throughout.
- Sprinkle top with sugar
- Bake for 50 to 60 minutes or until a toothpick inserted in the highest part comes out clean.
